Elevating Sustainability: From Zero-Waste to Invasive Species Transformation Jaras takes sustainability to new heights. Their zero-waste philosophy and eco-purity permeate every aspect, from kitchen to table. This translates into an array of authentic Southern Thai dishes with a modern twist, each telling a story of tradition, environmental responsibility, and culinary artistry.

A Pioneering Partnership with WWF Thailand: Turning Invasive Species into Delights Jaras takes another leap forward by partnering with the World Wildlife Fund (WWF) Thailand. This groundbreaking collaboration focuses on researching the potential of invasive flora and fauna as fine dining ingredients. By utilizing invasive species for culinary purposes, Jaras aims to disrupt the natural food chain and control their negative impact on the ecosystem.

Farm-to-Table Freshness, Sustainably Sourced Jaras curates a dining experience that prioritizes both deliciousness and environmental responsibility. Jaras sources organic ingredients from up to 17 farms across Thailand, alongside Jaras' very own Grace Farm in Phang Nga province.Grace Farm exemplifies Jaras' dedication to sustainability. Food waste from Jaras restaurant is transformed into organic fertilizer, enriching the soil that nourishes Jaras' homegrown vegetables. Jaras even raises free-range hens for fresh, organic eggs – all used to create the delectable dishes you've come to love. Jaras: Where farm-fresh flavor meets sustainable practices.

Closing the Loop on Sustainability with Oklin Food Composters Jaras takes a groundbreaking approach to food waste, partnering with Oklin Thailand to become a leader in sustainable kitchen practices. Our Oklin Food Waste Composter transforms food scraps into nutrient-rich fertilizer within 24 hours, dramatically reducing waste and our environmental impact.This innovative technology combats a major challenge in Thailand: overflowing landfills with food waste that generates harmful methane gas. By diverting 80-90% of food waste, Jaras plays a vital role.The Oklin system processes 125 kg of waste daily, creating 12 kg of organic fertilizer. This fertilizer is then distributed to local schools, communities, and our own gardens. We even use some to grow fresh, organic vegetables used in our dishes – completing the circle of sustainability and showcasing our commitment to responsible sourcing. Committed to Zero Waste with AI Technology Jaras embraces cutting-edge AI food waste monitor systems. These intelligent systems track and weigh food waste discarded by guests, providing valuable data to optimize portion sizes and minimize spoilage. About Our Chef:

Introducing Chef Chalermwut (Nui) Srivorakul, Chef de Cuisine at Jaras Restaurant

Chef Nui’s culinary curiosity started at the tender age of seven when he helped his mother prepare family meals. His keen interest in various cuisines inspired him to learn about a range of cooking styles and dishes with one goal in mind - using that knowledge to make the very best Thai cuisine. His passion for Thai cuisine is an ode to his mother, so he ensures each dish is made with the same love that goes into a home-cooked meal.

As the Chef de Cuisine at Jaras, Chef Nui is responsible for crafting modern Thai dishes with progressive presentation using the finest sustainable ingredients from local farmers and fishers. Chef Nui leads guests on a gastronomic journey, drawing inspiration from his Thai roots to deliver a memorable culinary experience in a fine dining setting.

Although proud of all of the delectable dishes on the menu at Jaras, Chef Nui recommends the Look Choke Curry. This signature dish uses local ingredients from Phang Nga province, fermented in-house at the restaurant’s fermentation lab. Don’t miss this incredibly unique dish, only served at Jaras.

He also recommends Choo Chii Goong, a delicious “zero waste” menu item. The entire shrimp is used to prepare this dish - even the head and shell are used to create the prawn bisque, served along with homemade curry using organic ingredients.

Throughout his career, Chef Nui has received a number of accolades and awards, including:

  • Food promotion in Singapore with Chef Henrik, owner of Kiin Kiin - a one Michelin-star restaurant
  • Food collaboration with Chef Ian and Issaya Siamese Club Team
  • Food collaboration with Chef Chumpol and the team from R Harn - a one Michelin-star restaurant
  • Chef’s Assistant to Chef Alan Passard, French chef and owner of L’Arpège - a three Michelin-star restaurant in Paris - for a food promotion at Issaya Siamese Club in 2019
  • Chef’s Assistant to Kirk Westaway, Executive Chef of Jaan Restaurant - a two Michelin-star restaurant in Singapore - for a food promotion at Issaya Siamese Club in 2020
  • Winner - Bronze Medal in TICC, Thailand International Culinary Cup 2013
